I’m not going to lie, I am guilty of very quick dinners. I am one of those parents who has never made anything from scratch. I love fixing pasta dishes yet I always purchase my noodles. I fix salad from a bag and dinner from a box. There are very few meals made in our home that don’t come with instructions. Don’t get me wrong, I enjoy cooking dinner. T, my oldest daughter, even took Young Chef Academy cooking classes for a couple of months and it was a lot of fun to make the recipes she learned at home. The issue isn’t that I hate cooking and although the issue of not knowing how to cook a lot is a problem it’s not the main issue either. The main issue in our home of not having long, fully thought out, homemade meals is the lack of time. Being a single mother of three while always running to appointments for Gab, working online, keeping up with the house and trying to tame a three year old, my time is taken. Unfortunately big dinners aren’t on my to-do list.
I have suffered from major mommy guilt over not cooking enough. Some weeks things are so crazy that we actually get burned out on fast food. Yes, believe it or not, kids can even get tired of McDonald’s. Plus the days that I actually don’t have kids during the day, daughters are at school and Noah is with his father, then usually I am in front of the computer all day and not fixing myself food either. This is where complete junk food comes in or snacks most the day but for sure never anything healthy for myself.
I have made New Year’s resolutions to fix this problem. I have made grocery shopping lists and swore to myself to cook nightly and work out of a recipe book. But facts are facts, my life is chaotic and I’m busy. So I am not even going to promise myself something I can’t keep or set the bar too high. I will however make a promise to try to provide more healthy quick meals. Fix Quix will be my savor for this.
